Hello,

Can I indicate somewhere in the source code that all current and new text will change and default to the font "open sons"

To change fons of your site, you can use any of the popular font plugins to change fonts of your site. I would recommend you to use either Font Organizer plugin or the Easy Google Fonts plugin.
